
Meatloaf.
So many harsh words are said about Meatloaf- and granted, the name itself isn't really helping the dish out. What should we call it to make it more appealing? Meat Casserole? Loaf Shaped Meal? I mean there's no way around it, meatloaf will sting the ears of those who had bad school lunch experiences or ground beef slices with ketchup for the mid-week family dinner.
Can you relate?
I had a half pound of lean ground pork in my freezer that I wanted to use up before long. For some reason the only thing I could think of to make beside spaghetti- which has worn out it's welcome at our house- was meatloaf. Thank goodness over the past 10-14 years I watched and helped my mom make dinner so I had a good idea of what needed to go into making this publicly hated meal.
I picked up some tomato paste and eggs at Publix before I came home from work; I put all of my ingredients together and hoped for the best. Mind you I had no recipe and called my mom for help but she didn't answer- I take it it was God's way of saying, "Betsy, you can do this! You can conquer this meatloaf, girl, I know you can!"
Thanks God, alright!
Here's what I mixed:
1/2 Lb. Lean Ground Pork
1 Slice Low Carb Wheat Bread torn into small bits
1 Egg
1/2 Can Tomato Paste
1 Tsp. Basil
1 Tsp. Marjoram
1 Tsp Garlic Powder
S&P
Mixed it up, put it in a baking dish (not in the shape of a loaf, more like an oval. So I basically had a meat-oval last night), baked for 40 min. at 400 degrees. Twenty minutes in, I took it out of the oven and spread a thin layer of the tomato paste on top and popped it back in.
All of that to say, it was good! Really and truly! I'm proud of myself because I didn't know the exact way to make it and was scared...but I'm glad I could trust my instincts. :) Adventures in meat-ovals....I'm soooooo lame
